Wolfgang Puck revealed the secrets of one of the dishes he served to a VIP guest list at the Oscars.
CHOCOLATE MOUSSE IN GOLDEN EGG CUPS
“[I thought] How can we serve it in something really elegant? And [executive pastry chef] Sherry Yard said, ‘How about we put it in an egg? If we color it golden it might look really nice.’ It’s the Oscar that laid the golden egg! It’s true for a lot of Oscar winners, once you win the Oscar, you lay the golden egg, your price goes up.
We set them in the egg carton while we make them, and we put a little touch of chocolate on the platter and the egg sits on the plate. The hard thing was to cut them on top perfectly. You lose so many when you try to do 1,500. We finally got an egg cutter, a special cutter—you go around and it breaks it open.”
