
1) Summer fresh pineapple Daiquiri with a dash of lemon and mint garnish -You’d be hard-pressed to find someone who doesn’t like daiquiris, but if you’re a little bored with strawberry, try pineapple and mint for a refreshing alternative.
Ingredients
1 pineapple (375ml fresh pineapple juice)
125ml Cointreau
125ml lemon juice
ice cubes
fresh mint
Method
Cut a fresh pineapple into pieces and put through a juicer with a handful of fresh mint leaves. Combine the pineapple juice, Bacardi rum, Cointreau, lemon juice and ice in a cocktail shaker and shake until well combined. Strain into glasses to serve. Serves 6

2) Margarita Sunrise – A splash of pink grapefruit juice adds both colour and a zing of flavour to this traditional cocktail.
Ingredients
60ml Tequila
40ml Cointreau or Triple Sec
20ml freshly squeezed pink grapefruit juice
1/2 cup ice
sea salt
Method
Place 6 cocktail glasses in the fridge to cool.
Combine the Tequila, Cointreau, grapefruit juice and ice in a cocktail shaker and shake for about 30 seconds. (If it’s a really hot day, add the ice and process in the blender).
Sprinkle salt onto a sheet of baking paper. Take the glasses out of the fridge and moisten the rim of each with a piece of grapefruit. Dip the rim of each glass in salt. Strain the mix into each glass and garnish with a thin slice of grapefruit or a slice of lime to offset the pink.

Fabulous raspberry and mango tropical frappé, with a dash of lemon
For teetotallers or those abstaining for good reason, frappés are just as delicious as their alcoholic counterparts. For a real treat grab a box of frozen raspberries, a couple of fresh mangoes, and a lemon for a bit of extra zing.
Ingredients
2 packets of frozen raspberries
2-3 mangoes
2 cups of cranberry or apple juice
1 lemon
Method
Squeeze half a lemon, then place in the blender along with one packet of berries, one cup of juice and one mango. Blend until smooth. Pour into glasses or a large jug to serve. Repeat. Serve immediately. Serves 6
